Thursday 2nd Post


Hi again,

Not sure whats going on with me today.I just know it's cold and very windy here. At times winds gusts have been 45 miles an hr. That may be my excuse..........or old age. I'm not saying which.

I went to mix up a meatloaf for supper. Ok got it done. I like to put it in the fridge for a while so all the flavors can mix together. Well went to do that and spilled a whole bowl of Chic.Gumbo soup everywhere. Have you ever tried to clean up rice off the floor when your knee won't bend for ya. It was in the fridge, down the inside of the door.It was a mess,but I managed to get it cleaned up as best I could. All though I'm going to have Mike look it over when he gets up,to make sure I got it all. I've been known to miss things.................There it is again old age............

While I'm at it I just thought I'd give you my (or my sis-in-laws) recipe for meatloaf. Don't know about you ,but I'always like fixing different recipes.

You'll need:

2# hamb.
1 box Savory Herb (Stove Top Stuffing)
3 or 4 eggs (I use 3 lg)
1/2 cup ketchup (or so)
1 onion ( dice small)
1/4 to 1/2 tsp. minced garlic(your taste-we like garlic)
1 pkg of dry ranch dressing ( I use Hidden Valley)

(you'll also need some honey for later)

Mix all together really good. Make into two loafs& put into pan (I use the bottom of my broiler pam) it's just deep enough ( wet hands with cold water smooth out each loaf) then I make a dent down the middle of each loaf. Cover with foil and bake at 350 for an hour or so. Take out of the oven.. uncover........mix some ketchup and honey together (as much as you like of each) I use more honey. Spread over top of meatloaf. Put back in oven uncovered for about 10 to 15 mins. Kinda looks like fudge brownies( see there another recipe) when it come out.

I never liked meatloaf until this recipe came a long. I'll take one for supper tonight and then freeze one for later. Happy eating. I'll try and give you more recipes later. Now I didn't say they were for dieters.

We had meatloaf for supper tonight too and it fell apart but it was good. I usually make my own like mh mother does but this time I used a different recipe. Funny that we had the same supper!! Smile.
We are waiting for the storms to pass tonight..tornados and bad things like that!! UGH!! I hate those things.

Don't you just love when days go like that? Your recipe sounds delicious. My brother loves meatloaf, I'll have to give this recipe to his gf.
